Applying the technique of cryo-maceration, which consists of keeping the must in contact with bostin for 4 hours, at a temperature of 2C. After clearing the must is subjected to an alcoholic fermentation with the help of indigenous yeasts, at a controlled temperature of 12-13C. This process allows the extraction of aromatic substances from the skin of oysters. Maturation takes place in stainless steel vessels.
