Maceration on Boston and fermentation takes place in oak wood vats for a period of 15 days. Fermentation is carried out only with the help of indigenous yeasts. The maceration is made with the purpose of extracting soft tannins and to produce balanced wines with a complex structure. The wine is perfect after a 1 year ripening period in oak barrels from Krasnodar, under controlled conditions of humidity and temperature.

It can be combined with smoked meat, grilled meat, mushrooms and fried vegetables, cheeses or highly spiced dishes.
